Super Easy Lemon Cookie Recipe

I LOVE these soft Lemon Cake Mix Cookies! These lemon cookies are a great option for a quick and delicious dessert. They're perfect for any occasion and can be easily customized to your liking. Plus, their lemony flavor and sweet confectioners sugar coating are sure to be a hit with anyone who tries them!

Just Five Ingredients

  • Box of Lemon cake mix - I recommend Betty Crocker Delights Lemon Cake with pudding in the mix
  • Eggs
  • Vegetable Oil
  • Pure lemon extract - you may substitute lemon zest
  • Confectioners Sugar - powdered sugar is the same thing

TIP: Sometimes lemon cake mix is hard to find. If you can't find lemon cake mix you may use vanilla cake mix and a box of 3.4 ounce lemon instant pudding & pie filling

How to Make Lemon Cake Mix Cookies

  • Prep - Gather ingredients, prepare cookie sheets, and preheat oven
  • Mix - Mix first 4 ingredients together with mixer until combined
  • Measure & Shape - Measure the dough and shape dough into balls then roll dough balls in confectioners sugar. Place each dough ball on prepared baking sheets
  • Bake - Bake for 8-10 minutes or until the cookies are set. Allow to cool a few minutes before moving to a cooling rack or plate for serving.

Alternate Recipe Idea: Iced Lemon Cake Mix Cookies

To make iced lemon cake mix cookies omit rolling the dough balls in confectioners sugar and bake as directed. While cookies are cooling make the lemon glaze as follows:
Lemon Glaze
  1. Combine 2 cups confectioners sugar with 2 tablespoons fresh lemon juice & 1 tsp pure lemon extract & mix well. Add more lemon juice a teaspoon at a time to thin if needed.
  2. Mix until well combined and drizzle over cooled cookies. Garnish with fresh lemon zest to your liking.

Additional Mix-in Ideas

  • 1 cup white chocolate chips
  • 1 cup fresh blueberries for a classic flavor combo
  • 1 cup shredded coconut for a tropical flavor
  • Add a pinch of dried lavender for a unique flavor

How to Store Cookies

To store your lemon cake mix cookies, make sure they have cooled completely before placing them in an airtight container. Yes! These lemon cookies freeze really well. First cool completely then place cookies in single layer on baking sheet and freeze until solid. Transfer frozen cookies to freezer bag or container & store in freezer for 3-6 months. Thaw before eating.

Lemon Cake Mix Cookies: A Delicious and Easy Recipe

Lemon cake mix cookies make a sweet, simple dessert. These cookies only require 5 ingredients, and they turn out great every time.

Ingredients

  • 1 box Lemon Cake Mix (15.25 ounce)
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon pure lemon extract
  • 1/2 cup Confectioners sugar

Instructions

  1. Preheat the oven to 350 degrees F and line a cookie sheet with parchment paper.
  2. In a large mixing bowl combine 1 box cake mix, 2 eggs, 1/2 cup vegetable oil, and 1 teaspoon lemon extract. Using a mixer on medium speed, mix for about 2 minutes
  3. Measure out 1/2 tablespoon of dough and roll into a ball
  4. Roll the ball in confectioner's sugar until coated and place on a cookie sheet
  5. Continue rolling the remaining dough into balls and coating with confectioner’s sugar. Place dough rounds on the parchment lined cookie sheet leaving space between each one. Bake in batches or use multiple cookie sheets as needed
  6. Bake for 8-10 minutes until set. Don’t let them brown. Allow to cool a few minutes before moving to a cooling rack or plate for serving. Enjoy!

    1. That's a good question. To be honest I've never tried subbing applesauce when making a box cake mix, however I have heard that you can, so it might work for the cookies too. Sorry I'm not much help :/ if you give it a try, please let me know how it goes! Thanks!
